Artichoke Heart – Parmesan Crostini
Ah... artichoke season. You can't get enough of it. What's even better is finding fresh marinated artichoke hearts at the grocery store. I was already making crostinis so I thought I could find a way to make something with the artichoke hearts as well.
PREP: Slice a baguette across into 12 identical pieces. Brush them with olive oil and broil them on 200 degrees Celsius for 6-8 minutes.
Dice artichoke hearts and combine in a medium sized bowl with shredded Parmesan, freshly cut parsley, olive oil, salt, and pepper.
ASSEMBLE: Top each crostini with the the artichoke mixture and serve.
